Khanom Jeen Nam Ya Pa (ขนมจีนน้ำยาป่า)

One of the greatest areas of Thai cuisine is the soft fresh rice noodles known as khanom jeen.

While there are a variety of curries that accompany any plate of the noodles, nam ya pa, or jungle curry, is one of my favorites. The curry sauce is a spicy blend that never fails to thrill the taste buds.
