My ginger love affair began in East Africa where I used to guzzle bottles of potent ginger soda known as Stoney Tangawizi (the best soda on earth in my opinion).
Gai pad king (ไก่ผัดขิง), or chicken with ginger, is a fairly common dish in Thai cuisine.
A little obvious, but I especially like it because of the high concentration of ginger in the dish, probably about 30% ginger shreds. The ginger is quite mild, probably made with young ginger, so it’s not too strong but the flavor comes through nicely.

Hi Mark,
Though I am not too sure I’d want to try this recipe out (hope you wont reject the comment for being TOO candid), would you mind sharing with me the recipe of the simplest Thai curry I can relish plain boiled rice?
I am not too much of a Thai food fan – I had this at a street side eatery once, and I’ve always been wanting to try the recipe out for myself. Hope you’ll oblige! :)
